		<description>Hi Chuck, I&#039;ve been into bread since I can remember, really love your site, I live and work in the island of Kauai in Hawaii, it&#039;s really nice here too. Anyway I&#039;ve been racking my brain on trying to make a Hamburger bun made with the local taro, a starchy root. I steam the root clean it then smash it like a potato, it&#039;s pretty dry when I add it to the dough. I add anywhere from 1 oz to 2.5 oz of taro to about 20 oz of flour (tried both high gluten and all purpose flour, even added spring whole wheat at time) with 12 oz of liquid which includes one egg. It really creates a great looking and tasting bun but it&#039;s just a little to heavy. I&#039;ve tried a lot of recipes but can figure out how to make something really light and fluffy with a good airy crumb. Any ideas? Do you think I could use a English muffin recipe and bake it instead of griddle it? Help from anyone would be greatly appreciated.</description>
