Hi,
I’m Chuck and I live in beautiful British Columbia, Canada. The best country in the world …. at least in my opinion. For as long as I can remember I’ve had an interest in food. At 17 I attended a culinary arts school to learn the basics. I worked at several restaurant before venturing out on my own and opened my first restaurant. Shortly after opening my restaurant I met my wife Donna. Working the long hours and the challenges of running a restaurant made it difficult to juggle a relationship and work. So, I sold the restaurant about 4 years later.
I continued in the business, managing and cooking in several franchise restaurants. Only to find out that the hours are just as bad and long as owning a restaurant myself. As a family we decided to open a soup and sandwich shop in White Rock, BC. This is where I started to find my passion for bread. I love the texture, feel, aroma of fresh bread baking in the oven. I learned a lot from having my soup and sandwich shop.
Several years ago I started cookingbread.com as an outlet for my love for bread. I wanted to share some of the unique recipes and help others to see that bread making isn’t that difficult to do. After about two years my sister came aboard and started taking photos for me. We teamed up and decided to create a blog that’s where The Knead For Bread was born. We wanted to help feature some of the special recipes we had on Cookingbread.com.
I hope you find both of my websites informative, inspiring and mouth watering.

I just want to thank you for your fantastic recipes – so far, I have made your strawberry bread, the spinach and feta bread, challah, monkey bread, banana chocolate crunch bread, and I’m going to make those carrot buns next! Thank you so much for these wonderful recipes and ideas. My dream is to open my own bakery someday…and if I’m going to do that, I need LOTS of practice.
I share your passion for bread. I love the various breads offered in Spain. Too bad it is so hard to find that quality of bread in the states. I miss Sevilla, Spain and the breads there so much. Your article on ‘cone bread’ has me thinking about getting a bread maker again but, if not that, then I want to learn more about making breads in a regular oven. I have not read many of your articles, do you have any breads that are better for diabetics? Thanks for your interest and guidance on breads.

I love to make bread at home! For Christmas, my husband bought me a wheat mill b/c it’s something I’ve wanted in the kitchen for awhile now. Since I learned about milling fresh wheat and all the nutrients involved in that, I could never feel comfortable going back to eating shelf-life bread found in stores. I’ve been searching online for some good sites and recipes to make my fun in the kitchen worthwhile. I am so amazed at yours and all you’ve aspired into your passion of making bread. I am stunned by your pictures, and glad to read about your love of baking, and just your personal information. As a baker myself, I LOVE SO MUCH the smell of bread baking. What got me started years ago, was eating PARKER ROLLS, made by my mother-in-law, in Brunswick, Canada. They were so good, I had to learn how to make them, so after many attempts, I found the secret to bread baking. My dough is calling me, but I will be back. Thank you for this.

Hi Chuck, I’ve been into bread since I can remember, really love your site, I live and work in the island of Kauai in Hawaii, it’s really nice here too. Anyway I’ve been racking my brain on trying to make a Hamburger bun made with the local taro, a starchy root. I steam the root clean it then smash it like a potato, it’s pretty dry when I add it to the dough. I add anywhere from 1 oz to 2.5 oz of taro to about 20 oz of flour (tried both high gluten and all purpose flour, even added spring whole wheat at time) with 12 oz of liquid which includes one egg. It really creates a great looking and tasting bun but it’s just a little to heavy. I’ve tried a lot of recipes but can figure out how to make something really light and fluffy with a good airy crumb. Any ideas? Do you think I could use a English muffin recipe and bake it instead of griddle it? Help from anyone would be greatly appreciated.

Thank you so much for making this website, it is AMAZING! I am sort of a bread making fanatic, and now thanks to this site I have tons of new recipes to distracts me from school, haha.
I make bread every wednesday in my dorm basement (we call it bread making wednesday…) and your recipes and methods are by far my favorite, keep up the fabulous work!
