Onion and Cheese French Bread

I was in Whole Foods a while back and had a chance to taste several different kinds of cheese for this recipe. I think that’s one of the things I love about Whole Foods. Cheese’s are not something I’m very informed about. So, to get the chance to taste before buying is a real treat.

As I’ve mentioned in past posts Gruyere cheese is my favorite to use in bread. But, when I decided to make this Onion and Cheese French Bread I wanted to use something different. I had a piece of Le Marechal by Emmi …. wow, what a flavorful cheese. Aged for five months, and at the beginning of the third month, the cheese is rubbed with Herbes de Provence (a blend of thyme, oregano and other country herbs) this gives a beautiful appearance and a flavorful spicy taste. It’s also reminiscent of Gruyere and Tete de Moine, Le Marechal is a new cheese, and I hope you will give it a try. I know you will love it.

    I found your blog earlier this week when browsing recipes. Today I pulled it up again to check your beet bread recipe, and… I ended up spending 45 minutes looking through every single entry. :)

    Hello Chuck. Haven’t been here for ages. Missed your breads. This one looks so good! I have never tried a Marichal cheese in my life. Sounds intriguing:) Bookmarking the recipe. Looks like I’ll need a separate folder to hold printouts from your blog:) What can I do? They are irresistible, especially for a bread monster like me:)

    Hello,
    I really enjoy bread and I’m just starting to learn the art of bread making. I’ve found your blog and website of great help for a begginer.
    I love your recipes, you’ve got a vast variety of really interesting recipes, that I intend to try.
    I’ve only tried two of your recipes so far, the Babka, I followed the recipe step by step but the dough was so very wet at the end I had to add more flour (like a whole cup) because it was sticking to everything and everywhere.

    Now I’m waiting for the second rise of this recipe (the onion french bread) but I’ve found two problems, you’ve mentioned to add salt but you haven’t given the exact amount which led me to add just 1 teaspoon, I hope that’s okay.
    One more thing, I added much less flour! The dough was getting so dry, so I decided not to add the rest of the flour which was about 3/4 Cup!
    Please, let me know if I’m doing something wrong. I’ll appreciate it.
