Rustic Reuben Bread

I was planning to have a different recipe this week, but sadly it just wasn’t working for me. Have you ever had one of those ideas and you work and work on, but it just dies on you. Well, that’s what happened to me this week. I wanted to make these bunny tails for Easter. They were going to be small round doughnuts with a marshmallow filling inside. The marshmallows were dipped in butter and then rolled in brown sugar, ground almonds and a little cinnamon. Then deep fried in oil. The problem was the marshmallow would blow out the sides lol. That wasn’t going to work. So, I decided to try and bake them instead. I didn’t like the look after they were baked. I then decided to coat the outside with the butter, brown sugar, ground almonds and cinnamon also. I just wasn’t happy with the results.

So, here I am … time to post another unique recipe and nothing for all the hard work I did this week. Thank goodness I had a backup for such an occasion, and here it is, a rustic Reuben bread filled with Corned Beef, Havarti cheese and Sauerkraut. It’s delicious and would be perfect for a picnic or lunch for a large group. I really don’t have much to say as I wasn’t planning on putting this recipe up till later in the summer. I know it’s not an Easter bread, but what can you do?

Oh my oh my….I am rather glad (sorry) that your other creation did not make it to a post as this looks simply divine…and I am dying to make some. Trouble is I am off to the land of the wheat…the prairies…to see family. So off to some homemade Paska for a few days. Thanks for your inspiring posts …. I can’t wait to come back and try this.

I think you “bake up” bread looks amazing! And, yes, that happens to me, too. It’s so disappointing when what is in your head doesn’t match what came out of the oven.
This would be great for a picnic! And, the doughnut marshmallow combo sounds great even if it didn’t work out yet.

I’m sorry your experiment didn’t work out – that happens to me all too often. Love your reuben bread though, my hubby would gobble the whole loaf up!

I am so gald you posted this. Easter Day will be a day full of church then home. No big family dinner or party. So this will be something special for the hubby and kiddo for a nice Easter Evening at home. Can I make this the night before and bake it when we get home from church?
