Top Ten #1 – Corn Jalapeno Lava Bread

The piece de resistance is this glorious Lava Bread. Of all the breads, for me this is the best – hands down. Let me start at the beginning. While Chuck was making this bread, I knew it was going to be special.
I don’t know if you’ve ever made bread before, but there’s a point at the beginning of kneading when the dough is warm and soft, like the softest, floppy little “Gund” Teddy Bear. I always ask Chuck to let me feel the dough at that point. It has the most incredible texture. After all the breads we have made this year, even I know what the perfect dough should feel like. You just know and that comes with practice.
The Lava bread is stuffed with a lot of cheese, we all know lava is hot, and this bread has just the right amount of kick from hot Jalapeno’s ( the seeds are not added so, the Jalapeno adds just a slight hotness ). The Nibblets of corn add the perfect amount of sweetness. The bread is loosely rolled up, powdered with flour, sliced like huge cinnamon buns and set up like soft little sacks of goodness with the cheese exposed. When it’s baked the cheese oozes over the side, like lava from an volcanic mountain. It’s truly an impressive bread, in both flavor and texture.

oh my this sounds so delicious I think it will need to be my next loaf for sure!
I am so thankful I found this website! I made this bread today (only my second loaf ever- I’m a novice at bread-making) and it was sensational!!! My husband & I can’t stop eating it – it’s crazy! A couple things to note:
(1) I used the seeds of the jalapenos because we like things spicy (I might even use a bit more next time)
(2) I think this recipe calls for yellow cornmeal, because that’s what it looks like in the class pictures, but I’m not positive because the recipe doesn’t say. (Our store had both yellow & white cornmeal.)

Just like you to know that your website is absolutely wonderful. Anyone can make bread learning from this website. I made the Corn Jalapeno Lava Bread and it turned out so delicious!! I served this with warm cheesy jalapeno dip for my husband during football game! It is an excellent combo, try it!
