Sausage and Leek Stuffing Recipe

With the American Thanksgiving and Christmas just around the corner I thought I would share with you my favorite stuffing recipe. In our family we only have turkey about twice a year and that’s during Thanksgiving and Christmas. One of the things we always look forward to is the stuffing. I think the stuffing is even more important than the Turkey itself.
I never cook the stuffing in the Turkey for a few reasons. For one, there never seams to be enough stuffing for everyone to get their fill. The second reason, is because I feel the stuffing dries out the turkey. As it absorbs the juices while cooking.
Instead I like to stuff the turkey with chopped carrots, onions, celery, garlic, salt and freshly ground pepper. This always adds more flavor for the turkey and the gravy. Which is something we never seam to have enough of either.
This stuffing is delicious with the garlic and thyme infused olive oil. I love the sausage and leek combination also. I used a sweet Italian sausage but, you could use something different like a hot or spicy sausage. That would be delicious too! The toasted croutons could be made the day before to help cut down on all the cooking on that special day. I hope you enjoy my special stuffing as much as my family does.

    Stuffing just hasn’t been working for me lately, maybe because I’ve moved away from sausage. I’m looking forward to trying this one, because I too love the stuffing!

    I’ve never met a stuffing that I didn’t like!

    Actually, I love finding new twists on stuffing as it encourages me to try new flavors in what is definitely my favorite Thanksgiving side. While spicy sausage normally appeals to me, I think the sweeter sausage your recipe calls for would be divine, and a nice contrast to the other traditional flavors of this meal.

    And I agree, I don’t like to “stuff” my turkey as well, for the very reason you listed. Instead, I make mine in a casserole dish, muffin tins, or just in dollops on a cookie sheet.

    Chuck, i don’t cook turkey at all because nobody in my family likes it :) but i don’t mind making the stuffing, that’s one thing we all love to eat.

    Looks great… we do a little of both- stuff the turkey but also make some on the side. I’ve never noticed my turkey as dry or anything because of it, but I’ll have to check that out.

    I have to make some stuffing for the teachers at my son’s school this week, so I’m looking around… will consider yours!

I haven’t been stuffing my turkey for years either, so I’m really glad to have a stuffing recipe that was designed for cooking separately. I’m going to give it a try this year!
