Carrot Buns

Sometimes, I wonder, who was the first person to start placing vegetables into baked goods? I ‘m sure it had to be someones mother, trying to get their kids to eat more vegetables. Whoever that clever mom was, she should get a medal.

I love the color and texture that carrots and other vegetables give to baked breads. Growing up you could never get me to eat carrot bread or zucchini bread. If my mom made carrot bread or cake she would have to lie to us because, if we ever caught wind that there were vegetables in the bread, we would never eat it.

These little carrot buns are stunning with the shredded carrots sprinkled throughout the interior, as well, they create a real chewy texture. You can taste the whole grains and the smoky flavor of the malt with every bite. The carrot buns would make a wonderful accompaniment to a piping hot bowl of soup or a chunky beef stew.

    Yay, I get to be the first to comment on this wonderful recipe! I love the idea of using carrots in a bread. Actually, any vegetable in a bread. AS a mom who struggles to have my daughter develop a taste and love for veggies, I always welcome recipes like this:) She won’t know what’s inside:) What a great recipe. Another masterpiece of yours. I have so many printouts from your blog. As soon as I am done with my cookbook, I am so baking your breads!

    While it was not a part of my growing up, as an adult, I have been reluctant to eat carrot bread or zucchini bread but now looking at your carrot buns, I want to give them a try :)

    These would be great oozing with maple butter.
    Is preparing a soaker a relatively new method? I don’t remember my grandmother using it w/ her grainy breads, but perhaps I wasn’t observing closely enough. Thx.
