Cauliflower, Honey Parantas

Looking around the food blogging world one can see that Indian cuisine is becoming very popular these days. This is not surprising after all, just the smells of the spices can make your mouth start to water.

Living here in Vancouver we have a large East Indian Community with many tantalizing restaurants to explore and savor. One of my favorite Indian restaurants is called Vij’s a dynamic, delectable restaurant that has become one of Canada’s best food establishments. You can not make reservations at Vij’s it’s only first come first serve and it doesn’t matter who you are, you will have to wait in line with everyone else. So, be sure to get there early or you may not get in at all.

Cauliflower, Honey Parantas and dip

Vij’s has a Cauliflower, Honey and Garlic Paranta that tastes phenomenal and I wanted to share this recipe with you. Indian breads are fairly new to me. So, I was excited to get this recipe and couldn’t wait to give it a try at home. I did make a few little changes to the recipe. I hope they won’t mind but, I couldn’t help myself.

Parantas are usually served with yogurt or even sour cream on the side. So, I decided to make a spicy yogurt dip that goes perfectly with the sweetness of the honey, cauliflower filling in these delectable flatbreads. The dip is a savory yogurt cayenne pepper dip which could be a perfect accompaniment if you wanted to cut these Parantas into triangles and serve them as appetizers. The sweetness of the honey and the spiciness of the cayenne pepper and the coolness of the yogurt and mayo make a perfect combination. You can also use this yogurt dip with chicken wings or potato skins.

Yogurt Dip

1/2 cup plain yogurt
1/2 cup mayonnaise
2 teaspoons powdered ranch dressing mix
1/4 teaspoon cayenne pepper
1 teaspoon lemon juice

Mix all together and let sit for 1 hour or more. Keep in an air tight container in the refrigerator.

    color me intrigued. cauliflower in a bread? of course, i just recently stumbled upon a recipe for bean bread, so clearly i don’t get out enough. :)

    i’ve seen Vij’s in a foodie show, i believe i should go back to Vancouver to taste those wonderful foods. i’m an indian food lover too but my hubby can’t stand it! :)

    These are knock-outs! I received Vij’s “Elegant & Inspired Indian Cuisine” as a gift. I love it. So far, all the recipes are grand successes. Once I get into Indian breads, I will be up to the elbows in flour for the rest of my life.
