Bread soup or Pappa al Pomodoro is basically a tomato soup thickened with stale bread, extra virgin olive oil and fresh basil. As you can see, this soup is very thick, much like a porridge and is a meal in it’s self. It may not sound like the most appetizing or tasty soup but, I can a sure you … this is one of the most delicious soups around.

I love the way Italians cook, it’s always very simple yet full of flavor and hearty. Well, this recipe is no exception, simple to make with a smooth texture that coats your mouth with the wonderful flavors of the crusty bread, the delicate aroma of the extra virgin olive oil, the sweetness of the vine ripened tomatoes, the freshness of the basil and that slight nutty taste of the Parmesan cheese. Just delicious!

In Italy they use everything, nothing goes to waist and stale leftover bread just adds a little extra something to this soup. If your lucky enough to have a garden and grow some beautiful vine ripened tomatoes, you can use them in this recipe or even your tomatoes from last summers canning. You will also find some wonderful canned tomatoes at your local grocer. Be sure to use a really good quality extra virgin olive oil and only use fresh basil (not dried). Then top it off with a little grated Parmesan cheese and a tablespoon of extra virgin olive oil.

    Oh, this definitely looks appetizing to me! Terrific! My husband might still want a “main dish” since it’s technically “soup,” but maybe if I throw a chicken breast in front of him with some of this soup he’ll be happy :)

    I have tried this soup….several times. My family LOVES it. We also use seasoned croutons if I don’t have bread. Great for a fall rainy day!
