Corn Cakes

If you are looking for a perfect breakfast to make this Valentine’s Day, why not try these simple yet delicious corn cakes served with sour cream.
I do most of the cooking in our home but, my wife usually makes the breakfast on Sunday mornings. I always look forward to her buttery homemade pan fried potatoes, crispy bacon, perfect over easy eggs and a freshly brewed pot of coffee. Normally we don’t get a chance to have breakfast during the week … I know what your thinking, that breakfast is the most important meal of the day, but, getting up at 4:30 – 5:00am in the morning, just doesn’t give us time to make breakfast. So, usually it’s just find whatever you can and run out of the house before the traffic gets really bad. I guess that’s why I look forward to Sunday mornings.
However, last week she made these amazing fluffy corn cakes. I loved the combination of the sweetness of the cream corn and the savory flavor of the jalapeno peppers and the chili powder. Then you smother the tops with sour ccream and you really have something special. I knew we had to put these corn cakes on the blog before this Valentine’s Day. So, if you want to make something a little different give these corn cakes a try.
